  • 34 garlic cloves (peeled)
  • 1 tbsp salt
  • 1/2 tsp coriander seeds
  • 2 small chili peppers (hydrated overnight if purchased dry)
  • 3 tomatoes (peeled)
  • Olive oil
  • Vinegar
  • Lemon juice
  • MERKEN (a mix of dry smoked chili peppers, coriander seeds, salt)
  • Bunch of cilantro and parsley

Instructions

  • Place the red hot chili peppers, salt, garlic, and coriander seeds into a stone mortar. Grind the mixture thoroughly for a few minutes until well combined.
  • Add the cilantro, parsley, lemon juice, vinegar, and olive oil. Mix well until the herbs are fully incorporated.
  • Add the peeled ripe tomatoes to the mixture and continue to grind until you achieve a beautiful, cohesive salsa.
