- 1 tbsp salt
- 1/2 tsp coriander seeds
- 2 small chili peppers (hydrated overnight if purchased dry)
- 3 tomatoes (peeled)
- Olive oil
- Vinegar
- Lemon juice
- MERKEN (a mix of dry smoked chili peppers, coriander seeds, salt)
- Bunch of cilantro and parsley
Instructions
- Place the red hot chili peppers, salt, garlic, and coriander seeds into a stone mortar. Grind the mixture thoroughly for a few minutes until well combined.
- Add the cilantro, parsley, lemon juice, vinegar, and olive oil. Mix well until the herbs are fully incorporated.
- Add the peeled ripe tomatoes to the mixture and continue to grind until you achieve a beautiful, cohesive salsa.
