Pan Amasado (Traditional Chilean Country Bread or Kneaded Bread)

Pan Amasado is a beloved traditional bread from the countryside of Chile. Known for its soft, fluffy interior and slightly crispy exterior, this bread is a staple in Chilean households. It’s commonly enjoyed with butter, cheese, or jam, and pairs perfectly with a warm cup of tea or coffee. The unique texture and flavor come from the kneading process and the use of butter, making it a comforting and delicious treat.

Ingredients

  • 8 cups of flour
  • 3 cups of lukewarm water
  • 2 tablespoons of yeast
  • 1 tablespoon of sugar (to mix with the yeast)
  • 1/2 cup of butter
  • 2 tablespoons of salt

Instructions

  1. Prepare the Dough:
    • In a large mixing bowl or a KitchenAid, combine the flour, yeast, sugar, and salt.
    • Gradually add the lukewarm water while mixing on a low setting.
    • Add the butter and continue to mix until all the ingredients are well incorporated, approximately 5 minutes.
  2. Kneading:
    • Once the dough is fully mixed, remove it from the KitchenAid.
    • Knead the dough by hand on a floured surface for about 3 minutes until it becomes smooth and elastic.
  3. Shaping the Dough:
    • Divide the dough into 16 equal parts. For consistency, you can use a kitchen scale to weigh each piece.
    • Roll each piece into a round ball.
  4. Preparing for Baking:
    • Flatten each ball slightly and place them on a baking tray lined with parchment paper.
    • Use a fork to poke approximately 6 holes in each piece of dough to help them rise evenly.
  5. Proofing:
    • Cover the dough with a clean cloth and let it rest for at least 1 hour in a warm place. The dough should double in size during this time.
  6. Baking:
    • Preheat your oven to 400°F (200°C).
    • Once the dough has risen, bake the bread for about 20 minutes, or until the tops are golden brown.
  7. Cooling:
    • Remove the bread from the oven and let it cool on a wire rack.
    • Enjoy your freshly baked Pan Amasado warm or at room temperature.
