TRADITIONAL HUMMUS WITH MERQUÉN

This Traditional Hummus with Merquén brings a smoky, spicy twist to the classic Mediterranean dip. The creamy, rich texture of chickpeas blended with tahini, garlic, and lemon juice is elevated by the distinctive Chilean spice, Merquén. Perfect as a dip for fresh vegetables, pita bread, or as a flavorful spread, this hummus is sure to become a favorite at your table.

  • Total Time: 10 minutes
  • Yield: Serves 4-6 1x

Ingredients

Scale
  • 23 tablespoons tahini
  • 23 tablespoons olive oil
  • 1 can chickpeas (garbanzo beans), drained and rinsed
  • 23 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1/4 cup water
  • Merquén, to taste (start with 1/2 teaspoon and adjust to preference)
  • Chopped green onions, for garnish

Instructions

  1. Blend Ingredients: In a food processor, combine the tahini, lemon juice, minced garlic, olive oil, and a pinch of salt. Process for about 1 minute, or until smooth and creamy. Add half of the chickpeas and blend for 1 minute. Scrape down the sides, then add the remaining chickpeas and blend for an additional 1-2 minutes, or until the mixture is smooth and well combined.
  2. Adjust Consistency: With the processor running, slowly add the water until the hummus reaches your desired consistency. You may not need the full 1/4 cup, so add gradually.
  3. Season and Spice: Add the Merquén, starting with 1/2 teaspoon. Blend, then taste and adjust the salt, pepper, and Merquén as needed.
  4. Serve: Transfer the hummus to a serving bowl, drizzle with a bit more olive oil, and sprinkle with extra Merquén and chopped green onions for garnish if desired. Serve with pita bread, crackers, or fresh vegetables.
