- Total Time: 10 minutes
- Yield: Serves 4-6 1x
Ingredients
Scale
- 2–3 tablespoons tahini
- 2–3 tablespoons olive oil
- 1 can chickpeas (garbanzo beans), drained and rinsed
- 2–3 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1/4 cup water
- Merquén, to taste (start with 1/2 teaspoon and adjust to preference)

Instructions
- Blend Ingredients: In a food processor, combine the tahini, lemon juice, minced garlic, olive oil, and a pinch of salt. Process for about 1 minute, or until smooth and creamy. Add half of the chickpeas and blend for 1 minute. Scrape down the sides, then add the remaining chickpeas and blend for an additional 1-2 minutes, or until the mixture is smooth and well combined.
- Adjust Consistency: With the processor running, slowly add the water until the hummus reaches your desired consistency. You may not need the full 1/4 cup, so add gradually.
- Season and Spice: Add the Merquén, starting with 1/2 teaspoon. Blend, then taste and adjust the salt, pepper, and Merquén as needed.
- Serve: Transfer the hummus to a serving bowl, drizzle with a bit more olive oil, and sprinkle with extra Merquén and chopped green onions for garnish if desired. Serve with pita bread, crackers, or fresh vegetables.
